Crockpot Taco Chicken Bowl

INGREDIENTS

  • 1 1/2 lbs. chicken breasts 
  • 1 16oz. jar salsa 
  • 2 cloves garlic, minced
  • 1 15oz. can black beans
  • 1/2 lb. frozen corn 
  • 1 Tbsp chili powder
  • 1/2 Tbsp ground cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • Freshly cracked black pepper

INSTRUCTIONS

  1. Add all ingredients to a crockpot.

2. Stir until well mixed.

3. Cover and cook on low for 8 hours or on high for 4 hours.

4. Put over a bed of white rice, sprinkle with some cheddar cheese and scallions and enjoy!
