We know this time of year means your kitchen table has somehow acquired an unnatural number of zucchini squash, and it’s hard to figure out ways to eat them without getting bored of the same old roasted stuff. So we bring you this recipe! It makes a great Sunday morning breakfast treat, especially served warm with a hearty chunk of butter on top. Enjoy!
Ingredients:
- 1 1/2 cups grated zucchini - 1 cup granulated sugar - 1/4 cup packed light brown sugar - 1/2 cup unsweetened applesauce - 1/3 cup vegetable oil - 2 large eggs - 1 teaspoon vanilla extract - 1 1/2 cups all purpose flour - 1/2 teaspoon baking powder - 1/2 teaspoon baking soda - 1/2 teaspoon salt - 1/2 teaspoon ground cinnamon
Recipe:
1. Preheat oven to 350 degrees. Spray a loaf pan with cooking spray or melted butter. Mix the zucchini, sugar, brown sugar, applesauce, vegetable oil, eggs, and vanilla in a bowl. Whisk until combined.
2. Add the rest of the ingredients and mix until no dry clumps are left.
3. Add to loaf pan and bake for 45-55 minutes. Use a toothpick to check for doneness. Cool in pan for 10 minutes before transferring to cooling rack and slicing. Store in the fridge for best results.
